Easy Beef Fajitas (makes 5 servings)
10 Best Choice® (6") Fajita Flour/Corn Tortillas
1/3 cup Best Choice® olive oil
1/3 cup Best Choice® balsamic vinegar
2 tsp. Best Choice® salt
2 tsp. Best Choice® garlic powder
1 tsp. Best Choice® thyme
2 tbs. fresh lime juice
1 lb. skirt or flank steak (cut into thin strips)
1 onion peeled and sliced
1 green bell pepper sliced
1 chopped tomato
1 tsp. Best Choice® coarse ground black pepper
Stir together olive oil and balsamic vinegar, garlic powder, thyme, salt and lime juice in a shallow dish, add in sliced steak and spoon mixture evenly over the steak. Marinate at room temperature for 10 minutes, turning once. Grill bell peppers, onions, tomatoes and meat until tender and done. Season to tast with course ground black pepper. Serve on warm flour tortillas with your favorite fajita toppings.
